Long-time Chicago chef Ryan McCaskey's originally from Maine, and he proudly showcases that hometown pride in his signature lobster roll (the bread is shipped in on a regular basis from Maine). But that's only the beginning of the menu for this classically trained chef, whose dishes mostly reflect French influences.
