Everest - Chicago

Chef Jean Joho is a native of Alsace, though the Alsatian elements on his menu usually play a supporting role. The salmon, smoked in-house, is served with traditional Alsatian fleischschnackas (pasta spirals filled with meat), sea scallops are paired up with fennel choucroute, and dry aged New York steak comes with Alsatian potato gnocchi. The dining room, located high above the Chicago Stock Exchange, offers expansive views over Chicago’s west side, and the sophisticated room is tastefully appointed with original paintings and sculpture. The wine list is world class, offering over 1,500 bottles, many representing the vinicultural traditions of Alsace, but with good representation of other regions as well.
