Three Aces Serves up the Finest in Gastropub Cuisine

Farm-to-table Italian fare and an all-American beer list is what you will find at Three Aces. Located in the University Village section of Little Italy Chicago, this basement-style restaurant gives homage to this area’s culinary roots, serving up contemporary Italian along with seasonal American cuisine in an atmosphere sporting true rock and roll flair and great beer to boot. This is why this self-named “neighborhood joint” is a famous restaurant stop in Chicago.

Featuring Wreckless Chicago’s Sunday Bike Nights on select Sunday from May through October, live bands entertain while patrons can chow down on the Gastropunk pub’s handcrafted cuisine and enjoy a selection of craft beer from a relatively extensive selection of brew given the restaurant’s size.

Headed up by Chef and Partner Matt Troost, the food served is much more than typical bar fare. Crafting new creations from his years of experimenting with meat-curing and homemade cheese styles, Troost has designed a menu that incorporates the best farm-to-table selections with techniques in deliciously appetizing entrees.

Three Aces Illustrates

As a place that invites new menu items with out of the ordinary ingredient mixes, the Three Aces menu continues evolving its offerings to give diners unique culinary choices to try and enjoy.

Case in point, Troost along with Mixologist Lorna Biljan has combined an offering that includes Steak Tartare with hand-cut Beef Tenderloin that is topped with mustard, herbs, radicchio, breakfast radish, farm egg-yolk, and pork rinds.

If red meat is not your thing, than order up Troost and Biljan’s Buckwheat Gnocchi that comes with Rabbit Confit celeriac cream sauce with touches of pistachio, pecorino, and celery leaves.

There is also a mushroom tortellini dish, inspired by beef stroganoff, that Troost creates by hand making his own tortellini. The stuffed pasta comes with mushroom duxelle, ricotta, and sour cream. Be sure to ready your taste buds for an umami-kick with this dish, as it is packed with a medley of confit cremini mushrooms, caramelized onion jus, chanterelles, braised beef short rib, chive crème fraîche, and fried garlic. The flavors in this dish are enough to keep you happily satisfied for days!

Another Italian culinary tradition that hits the Three Aces menu but is constantly shifting its place in the dishes is porchetta. The Italian meat staple has been incorporated in sausage offerings in the past and encased with fennel seed, garlic, rosemary, and fennel pollen seasonings. Often served with black kale, green lentils, pickled shallots, golden beet slaw, and celery leaf, porchetta lovers can rejoice however it hits the menu that day!

As can be expected at any true Italian restaurant, Three Aces offers diners olives but with a contemporary twist. Troost pits a variety of specialty olives, places them in a cast-iron pan that is filled with tomato-vodka sauce and topped with house-smoked buffalo mozzarella.

Anytime you’re hungry and near the Medical District, a stop at Three Aces is a definite must-do.
